Oog sis! There are tons of good vegetarian recipes you can do! I usually try and create my favorite meat dishes and try and substitute any of the meat with meat substitutes or hearty vegetables. Sometimes the vegetarian option can even be better than the meat dishes. The trick is to use a variety of spices, herbs, sauces, and such to add more flavor. But you also have to be careful not to overcook the non-meat ingredients because they can dry out and burn quickly since meat has fat as natural juices to keep it from drying out. You can also marinate them since they absorb flavors well.
Here are some meat substitutes:
- Tofu - use like chicken
- Seitan - kinda like tofu, but people use this that can’t/won’t eat soy (tofu)
- Tempeh - they have them like deli cut meats for sandwiches
- Eggplant - versatile veggie
- Portobello Mushrooms: use like steak
- Soy (get them at the Mexican grocery stores, dried, flavored and cheap!)
- Cauliflower - it’s a hearty meaty veggie that takes flavors well and can hold shape if not overcooked. Try aloo gobi. Mmm.
Here are some other ideas:
- Portobello Mushroom burgers, pasta
- Eggplant parmesan (one of my fave’s)

Sometimes we feel like eating vegetarian and we’ll create a whole new recipe with what we feel like eating, what’s on sale, what we have in the fridge, what we get at the farmer’s market, what we’ve eaten at a restaurant, see on tv. Find inspiration everywhere! Food is just another medium of art. Most important - have fun, enjoy the process and cook with good ingredients you enjoy the flavors of! Take risks and experiment.

…But I woke up feeling great!
Today I had an interview with a major photography company. Feelings of anxiety started arising as I reminisced about my time entering the Human Resources profession circa 2006. I felt the interview went awesome, and I hope they see potential in what I have to offer. But even before hearing if I’m hired (or not), I feel eternally grateful that I have the opportunity to change careers into a more creative position. I’ve always been a late-bloomer and the situation I find myself today is a major testament. As I approach the end of my 20’s, the constant battle for growth and exploration still continues - and probably will be a life-long journey in the name of happiness.
Though I don’t necessarily want to wake up feeling like a hip-hop mogul, I want to wake up feeling excited about my life, career and personal endeavors.
